R 9002 has great qualities that ensure a steady and complete fermentation. Its killer factor and influence on the polyphenolic structure of wine makes it very efficient for red wines.
The I.O.C. R 9002 works on polymerising tannins which insures good stability of the colour. Wines will have a deep and intense colour, a clean and fruity nose and are softer on the palate. Theses characteristics give the I.O.C. R 9002 a great success in making red wines to be consumed with maximum fruit potential and stable colours.
Average dose and directions for use
Red and rosé wines : 10 to 20 g/hl of must.
Put the yeast in 10 times its weight of warm water (38 - 40 °c / 100 - 105° F) with sugar (50 g/l). Rest without stirring for 15 min then stir well. Add to the must ( after adding sulfites).
